A healthier Dinner Party Recipe

We know how it is, you have arranged for friends to join your for dinner and you want to show off your cooking skills but also want to stick to the healthy eating lifestyle that you have come accustomed to.

Cooking for yourself will always seem easier than cooking for others.  Invite people round and suddenly everything can appear so much more complicated?  Most people tell us that they start to question the flavours, the textures and the variety of the nutritious foods that they eat.  They question if what they make for themselves would be suitable for guests to dine on.

Cray Fish Tail Risotto


160g risotto rice

1 chopped red onion

1 tbs olive oil (can use coconut)

200g cooked crayfish tails

500ml chicken stock

Pinch of Salt and Pepper

1 – 2  tbs dried basil (to taste)

1 cup of frozen peas (cooked)


Saute chopped onion in a wok with oil adding the pinch of salt to keep in its flavour and stirring until soft.  Add rice once onion is soft and stirring until rice starts to turn clear/transparent.


Start to ladle the stock into the rice one spoon at a time. Stir continuously on a low heat, only adding more stock when the previous has been soaked up by the rice.  This will take about 20 minutes, during this time you may find you need to make up some additional stock, or add more water to the rice if it is not quite cooked.  Make sure that you do not let the rice burn, this will mean stirring for the full 20 minutes or so, but believe us the extra care and attention is worth it!



Sample the rice and if it seems almost ready, it is time to add in the pepper basil, peas & crayfish tails.  Cook for a further 2-3 minutes until the rice is soft and your dish is the perfect risotto.

We served ours with grilled salmon fillet and it was a total hit!!
