Protein Packed Peanut Butter & Strawberry Muffins!

Are you a succer for something sweet,  do you find the hardest part of working towards your goals can be when you really need to say no to those cakes and muffins at work on a Friday afternoon?  Well how about if we told you there are plenty of alternatives out there that would leave you feeling more that sweet tooth satisfied with far less of an impact on your goals and waistline.  All it takes is a little creativity and you’ll be amazed by how good, good food can taste.

Protein Packed Peanut Butter & Strawberry Muffins!

 

 INGREDIENTS

1 Ripe Banana

2 Egg Whites

2 Tbs Peanut Flour (we bought ours from Sainsburys)

1/4 Scoop Vanilla Protein Powder

1 Tsp Melted Coconut Oil

1/2 Tsp Baking Powder

Pre-heat oven to 170 degrees

For topping you will need…

STEP ONE

Blend all of the ingredients together in a food processor until the mixture is smooth.

STEP TWO

Lightly oil your muffin tray using the remaining oil traces from the bowl that you melted the coconut oil in.

 

STEP THREE

Spoon the mixture evenly into each muffin section.  The mixture should make 6 small snack sized muffins.
Place in the oven and bake for 10 minutes, or until a toothpick comes out clean if you prick them.

 

STEP FOUR

Spoon on a tiny blob of peanut butter, sprinkle on some shredded coconut and top with half a fresh strawberry. 

Delicious little bite sized treat!   As with everything – enjoy in moderation! 😉
