Turkey & Apricot Patties

We love home cooked food, better still we love home cooked food that is good for us that we can guarantee that others will like to give a try too.  If we can give just one person a fresh idea to shake up their dinner plate then we’ve done our job as far as we are concered.  Sure, healthy alternatives are not for everyone, but that doesn’t mean that we are going to stop exploring the many possibilities that there are out there and with the help of social media platforms such as instagram and pintrest, there are so many places to look for a great recipe these days.

Today we’re sharing one of our favourite burger recipes.  This recipe, substitutes the usual beef mince for turkey mince and we add a few extra delights in there for that extra special taste and some additional nutrients.

Turkey Burgers

 INGREDIENTS

1 packet of lean turkey mince (500g)

1 red onion, finely chopped

60g porridge oats

2 cloves of chopped garlic

100g dried apricots, chopped into small pieces

1 grated carrot

1 egg, beaten

2 tbs olive oil or coconut oil

Pre-heat oven to 200 degrees

STEP ONE

Start by gently frying onions in a pan until soft, adding in the garlic as you do. Once soft, add the porridge oats and fry for another minute. Put to side to cool.

STEP TWO

Once above mixture is cool  add it to the mince, apricot, carrot and egg in a large mixing bowl and mix the ingredients together well with your hands.

 

STEP THREE

Separate the mixture into 6 palm sized patties and using the remaining oil, gently seal both sides of the patties in a pan for roughly 2 minutes a side.

Transfer the patties to a baking try covered with parchment paper and pop them in the oven for  15-20 minutes until cooked through.
